If you’re staying near the city centre, the Sheel Mahal hotel is only a short walk from the palace and the observatory, so you can hop out early and return before the heat builds. The first guided tour at Jantar Mantar usually starts around 9 am, which gives you enough time to stroll through Albert Hall Museum before the sun climbs higher.
