You’re right that the cable car will close a bit before sunset, so the last lift usually leaves around 5 5:30 pm. Paragliding is only a daytime activity, so you won’t get a flight after 4 pm. For a quick Himachali bite, the Kangri café at the valley’s base stays open until about 8 pm and serves thalis, channa daal, and gajar paratha that are quick and filling. If you’re in a rush, you can also grab a tea stall snack nearby before heading back to Manali.
